Recipe For Weight Watchers Turkey Meatloaf

Many Dieters are in search of a good healthy meatloaf recipe. One of the most popular has got to be the Weight Watchers Turkey Meatloaf. Here are a couple versions that can be made with either Lean Ground Beef or Ground Turkey. Even if you are not a meatloaf fan these recipes are juicy and full of flavor. Different ingredients are added to these recipes to add fiber which in turn lowers the point value. Even non-Weight Watchers will love these dishes. Served with vegatables or a salad makes them a nice low point meal that use up your daily allowance of points. The point values given are for the turkey version. Recipe For Weight Watchers Turkey Meatloaf
Deluxe Meatloaf - 6 Points per Serving

2 Eggs lightly beaten (or 6 egg whites)
1 Cup Seasoned Bread Crumbs
1 ½ Cups Seasoned Bread Crumbs
1 16oz Can Kidney Beans, rinsed and Drained and Mashed
1 Large Onion, Chopped
1 Rib of Celery, Chopped
2 tsp Worcestershire Sauce
1 tsp Lemon Pepper Seasoning
½ tsp seasoned salt
2 ½ lbs of Lean Ground Beef or Ground Turkey
½ Cup Water

In a large bowl combine the eggs, 1 cup ketchup, rinsed, drained, mashed, kidney beans,seasoned bread crumbs, chopped onions, chopped celery, Worcestershire sauce, lemon-pepper seasoning and seasoned salt. Crumble beef over the mixture and mix in well. Shape into two loaves. Place in a 13×9 inch baking dish coated with non-stick cooking spray. Combine the remaining ketchup with the water and pour over the loaves. Bake uncovered at 325 for 70 minutes or until a meat thermometer inserted into meatloaf registers 170 degrees.

Weight Watchers Turkey Meatloaf recipe - 4 Points per Serving
Makes 8 servings
Ingredients
1 1/4 lbs ground turkey
1 1/2 cups onions, chopped
1 tablespoon garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons Worcestershire sauce
1/3 cup fresh parsley, finely chopped
1/4 cup ketchup
1 cup quick oats (not instant)
1/2 cup plain yogurt
1 whole egg, lightly beaten
Preparation
1. Preheat oven to 400 degrees.
2. In a non-stick skillet, cook onion and garlic in oil or cooking spray over moderate heat.
3. Stir continuously until onion is softened (about 2 minutes).
4. Place onion and garlic in mixing bowl with salt, black pepper, Worcestershire sauce, parsley and ketchup.
5. Mix well.
6. Stir in quick oats, plain yogurt and beaten egg.
7. Let stand 5 minutes.
8. Add turkey and mix well with your hands.
9. Place turkey mixture in a lightly oiled or cooking sprayed standard bread pan.
10. Bake 50 to 55 minutes (until meat thermometer inserted into meatloaf registers 170 degrees).
11. Let stand 5 minutes before serving.

These Dishes are even better left over or re-heated. Make extas and take them to work with you for a great low point lunch. You can even serve it cold over a salad or bed of greens.
